Baking Challenge #9 Rhubarb Crumble

I’m doing a Baking Challenge and this is number 9!
This time I’m making a rhubarb crumble. I’m very lucky it’s rhubarb season, even though it’s rare to find this ingredient here in Portugal. Do you like rhubarb? What’s your favourite rhubarb dessert?

Once again, I need to apologise to my husband since I was very skeptical about finding rhubarb to be able to make this recipe (he’s the one who chose to include it in this challenge). I’m sorry! I’m so glad I was able to do it.

Rhubarb Crumble
180ºC for 40 mins (30 + 10)

Topping
160g unsalted Butter
70g light brown sugar
¼ tsp salt
¼ tsp cinnamon
70g ground almonds
25g walnuts/ other nuts (chopped into small pieces)

Filling
660g chopped rhubarb
40g dark brown sugar (you can add more if you want it sweeter)
¼ tsp cinnamon
