Ingredients:
Pastry Cream (makes about 400g)
Please note that in the video I made double this amount, but this amount will be enough
250ml whole milk
½ tsp vanilla paste or ½ vanilla bean
50g sugar
50g eggs (1 egg approx.)
1 tsp corn starch
1tsp flour
25g butter
For the Vanilla Soufflé
3 x 9cm ramequins (more if using smaller)
(200ºC, 20 – 25 mins)
325g of pastry cream
1tsp vanilla paste
150g egg whites (5 whites)
50g sugar
Butter and sugar for greasing
Icing sugar for dusting
